Stranded with a microwave

Happy Tuesday!

My days at the college in London have been crazy and very busy. I need to leave early and usually arrive back home late. Only equipped with a microwave in a small apartment in London getting a quick and healthy meal option late at night can be challenging! I try to avoid takeaway food or ready made meals.

So yesterday I tried a very simply yet  healthy and nutritious dish prepared by microwave using sweet potatoes and chick peas. I only added a bit of pepper and English mustard :). I really love tasting the natural flavor of ingredients.

microwave-healthy-foodI added a bit of water and left the potatoes to cook for about 8-10 minutes on a medium position. After a around 5 minutes I stirred them carefully to ensure that all pieces are evenly cooked.

Microwave-foodIt tasted lovely and I slept very well after this simple dish. It is also a good base for adding pre-cooked chicken pieces and other veggies. I also enjoy kale and broccoli.

  1. I’ve not tried this combo like this. I hardly use the microwave, but I do love chickpeas and also kale. I made a spinach hummus spread recently.

  2. When I was living near school i only had a microwave also! Unlike you I lacked creativity so I mostly ate microwaveable dinners and things like oatmeal a lol
